After looking through my past photo collection, I think Apom Guan is worth a re-post here. Mom bought me some of these apom balik while I was still in campus. It should be more than half a year since I last had them.
Yummy and comforting. These little pancakes were packed with egg taste. Each small buckets would be filled with at least 20+ fresh eggs depending on sizes.
According to Uncle Guan, the timing for the pancake hotplate to be filled, add in slice banana & corn and removing the cooked pancakes has to be perfect and in sequence. Once pour the batter in, the sliced bananas would be added. The sliced bananas must be added to all of the pancakes and quickly cover the hotplate. He cannot add bananas to half of the hotplate and tend to your orders, else the whole hotplate of pancakes would be ruined.
With such determination of making perfect pancakes, you wouldn't be surprise if some customers order 100-200 pieces of apom balik :P
